Ingredients

For the Cookie Dough
  • 1 ⅓ cups all-purpose flour
  • ⅔ cup blanched almond flour
  • 2 teaspoons cornstarch
  • 1 tablespoon matcha powder
  • ¼ teaspoon fine sea salt
  • ½ cup cane sugar
  • ¾ cup vegan butter, at room temperature
  • 1 tablespoon unsweetened almond milk
  • 1 teaspoon vanilla extract
  • 3 to 5 drops green food coloring, optional
For the Filling and Topping
  • ½ cup raspberry jam
  • 3 tablespoons powdered sugar
  • 1 teaspoon matcha powder, for topping

Method

Mix the Dry Ingredients
  1. In a medium bowl, whisk together all-purpose flour, almond flour, cornstarch, matcha powder, and sea salt until evenly mixed.
Cream the Sugar and Butter
  1. In a large bowl, beat the cane sugar and vegan butter together on low speed for about 3 minutes until light and fluffy.
Add the Wet Flavors
  1. Scrape down the sides of the bowl, then add almond milk, vanilla extract, and food coloring if desired. Beat for another minute until smooth.
Bring the Dough Together
  1. Add the dry mixture to the wet mixture and mix on low until dough clumps together. If too dry, add water as needed.
Chill the Dough
  1. Split dough into two discs, wrap tightly, and refrigerate for at least 1 hour or overnight.
Prepare Your Workspace
  1. Line two baking sheets with parchment paper and lightly flour your workspace.
Roll Out the First Disc
  1. Knead one disc for 30 seconds, then roll out to ¼ inch thick.
Cut the Cookies With Hearts
  1. Cut out cookies using a round cutter and a small heart cutter, then transfer to a baking sheet leaving space between each.
Chill the Shaped Cookies
  1. Refrigerate shaped cookies for 30 minutes.
Make the Bottom Cookies
  1. Roll the second disc out to ¼ inch thick and cut without using the heart cutter, then refrigerate again for 30 minutes.
Bake the Cookies
  1. Preheat the oven to 350°F and bake each tray for 8 to 10 minutes until the bottoms are lightly browned.
Cool Completely
  1. Transfer cookies to a wire rack to cool completely.
Add the Matcha Sugar Topping
  1. Whisk together powdered sugar and matcha powder, then dust over heart-cutout cookies.
Assemble the Sandwiches
  1. Spread raspberry jam on the solid bottom cookies and top with dusted heart cookies, pressing gently.

Notes

Use soft butter instead of melted, and ensure to chill dough properly to avoid spreading.
