  • 3 links Italian sausage, casings removed (about 10 to 12 ounces) Can be substituted with ground turkey, beef, or a vegetarian option.
  • 6 ounces Sliced mushrooms
  • 1 tablespoon Olive oil, plus more as needed
  • 3 cloves Garlic, pressed or minced
  • 1 cup Whole-milk ricotta cheese Can substitute with cottage cheese blended until smooth.
  • 1/4 cup Grated Parmesan cheese
  • 1 cup Baby spinach leaves, roughly chopped
  • 1 teaspoon Italian seasoning
  • 1 cup Grated whole-milk mozzarella cheese
  • Salt, to taste
  • Black pepper, to taste
  • Fresh basil leaves or chopped parsley, for garnish
For the tomato sauce
  • 2 tablespoons Olive oil
  • 6 cloves Garlic, pressed or minced
  • 1 pinch Red pepper flakes
  • 2 teaspoons Italian seasoning
  • 1 can (28 ounces) Crushed tomatoes
  • Salt and black pepper, to taste

Method

Build Your Tomato Sauce First
  1. Heat 2 tablespoons olive oil in a saucepan over medium heat. Add the garlic, red pepper flakes, Italian seasoning, salt, and black pepper. Cook for 30 seconds to 1 minute, just until fragrant.
  2. Stir in crushed tomatoes and season everything to taste. Let the sauce simmer uncovered for about 15 minutes, then pull it off the heat and set aside.
Cook The Sausage And Mushrooms
  1. Heat a nonstick skillet over medium-high heat. Add the Italian sausage and break it apart with a spatula as it cooks, until it’s nearly cooked through.
  2. Toss in sliced mushrooms along with a splash of olive oil if the pan looks dry. Cook for 4 to 5 minutes, stirring occasionally, until the mushrooms turn tender.
  3. Add the garlic and cook briefly until fragrant, about 30 seconds. Transfer everything to a paper-towel-lined plate and let it cool slightly.
Mix Up The Ricotta Filling
  1. Combine the cooled sausage and mushroom mixture with ricotta, Parmesan, chopped spinach, Italian seasoning, salt, and black pepper in a large bowl. Stir everything until fully combined.
Preheat The Oven
  1. Set your oven to 425°F while you finish prepping the zucchini.
Prep Your Zucchini Ribbons
  1. Lay the zucchini ribbons out on a work surface and sprinkle them lightly with salt. Let them rest for about 10 minutes.
  2. Blot each ribbon thoroughly with paper towels.
Layer The Sauce In Your Baking Dish
  1. Spread the prepared tomato sauce evenly across the bottom of a baking dish.
Roll Up Your Zucchini
  1. Place a heaping tablespoon of ricotta filling at one end of each zucchini ribbon. Roll the zucchini around the filling gently, standing each roll upright in the baking dish.
  2. Repeat this process until every ribbon and all the filling gets used, arranging the rolls snugly together.
Top With Mozzarella
  1. Sprinkle the grated mozzarella evenly over the top of all the stuffed zucchini roll-ups.
Bake Until Golden
  1. Bake uncovered for about 25 minutes, until the zucchini turns tender and the mozzarella melts into golden perfection.
Garnish And Serve
  1. Let the dish sit for a couple of minutes before serving. Garnish generously with fresh basil or chopped parsley.
