Sauce Ingredients
  • 1 cup heavy cream Use room temperature for best results.
  • 1/2 cup grated parmesan cheese Grate your own for better texture.
  • 2 tbsp butter
  • 1 cup sliced mushrooms Button, cremini, portobello, or shiitake can be used.
  • 1 clove garlic, minced Use more if you love garlic.
  • 1/4 tsp salt Adjust to taste.
  • 1/4 tsp black pepper Adjust to taste.

Preparation
  1. Slice the mushrooms into even, medium-thin pieces and mince the garlic finely.
Cooking
  1. Melt the butter in a medium saucepan over medium heat.
  2. Add the sliced mushrooms and let them sear undisturbed for 2 to 3 minutes before stirring.
  3. Continue cooking for another 2 minutes until soft and lightly caramelized.
  4. Push the mushrooms to the side and add the minced garlic to the butter, cooking for 30 to 45 seconds.
  5. Pour in the heavy cream, stirring gently, and let it come to a gentle simmer for about 2 to 3 minutes.
  6. Reduce the heat and let it cook for an additional 3 to 4 minutes, stirring occasionally.
  7. Off the heat, add the grated parmesan in two batches, stirring steadily until smooth.
  8. Season with salt and pepper, tasting for adjustments.
  9. Check the consistency and adjust with pasta water or more cream as needed before serving.

Notes

This sauce is best served immediately with your choice of pasta. Consider serving with a crisp salad or garlic bread.
