Ingredients
  

For the salad
  • 4 pieces Gala apples, chopped Wash and chop into bite-sized pieces.
  • 2 cups black or red grapes Can use whole or halved grapes.
  • 1 cup chopped walnuts Plus extra for garnish.
For the dressing
  • 8 ounces cream cheese, softened Let sit at room temperature for 30 minutes.
  • 1 cup plain Greek yogurt Thicker than regular yogurt.
  • cup light brown sugar Plus extra for garnish.
  • 2 tablespoons granulated sugar
  • 2 teaspoons vanilla extract

Method
 

Preparation
  1. Wash and chop the Gala apples into bite-sized pieces, leaving the skin on for extra color. Toss with a small splash of lemon juice to prevent browning.
  2. In a large mixing bowl, add softened cream cheese, Greek yogurt, brown sugar, granulated sugar, and vanilla extract. Beat until smooth and creamy.
  3. Check the dressing's consistency; it should be thick and smooth. If lumpy, continue beating until smooth.
Mixing
  1. Add the chopped apples, whole or halved grapes, and chopped walnuts into the bowl with the dressing. Gently fold together to coat the fruit.
  2. Continue to fold until all pieces are evenly coated. Check for any uncoated areas at the bottom of the bowl.
Serving
  1. Transfer the finished salad to a serving bowl and garnish with extra chopped walnuts and a dusting of brown sugar.
  2. Serve immediately or refrigerate for up to two hours for a firmer texture, adding extra walnut garnish right before serving.

Notes

Store leftovers in an airtight container in the fridge for up to 2 days. For variations, try adding dried cranberries, crushed pineapple, caramel drizzle, or a sprinkle of cinnamon.
