Preparation
- Wash and chop the Gala apples into bite-sized pieces, leaving the skin on for extra color. Toss with a small splash of lemon juice to prevent browning.
- In a large mixing bowl, add softened cream cheese, Greek yogurt, brown sugar, granulated sugar, and vanilla extract. Beat until smooth and creamy.
- Check the dressing's consistency; it should be thick and smooth. If lumpy, continue beating until smooth.
Mixing
- Add the chopped apples, whole or halved grapes, and chopped walnuts into the bowl with the dressing. Gently fold together to coat the fruit.
- Continue to fold until all pieces are evenly coated. Check for any uncoated areas at the bottom of the bowl.
Serving
- Transfer the finished salad to a serving bowl and garnish with extra chopped walnuts and a dusting of brown sugar.
- Serve immediately or refrigerate for up to two hours for a firmer texture, adding extra walnut garnish right before serving.
Notes
Store leftovers in an airtight container in the fridge for up to 2 days. For variations, try adding dried cranberries, crushed pineapple, caramel drizzle, or a sprinkle of cinnamon.
