Ingredients
  

For the Wings
  • 2 pounds chicken wings, split into flats and drumettes Use fresh or fully thawed wings.
  • 1 tablespoon olive oil Helps the dry rub adhere.
For the Dry Rub
  • 2 teaspoons paprika
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon brown sugar
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/4 teaspoon cayenne pepper Optional for extra heat.
  • 1/2 teaspoon dried oregano

Method
 

Preparation
  1. Thaw and dry the wings completely if they're frozen.
  2. Preheat the oven to 400°F and prepare a wire rack on a rimmed baking sheet.
Coating the Wings
  1. Drizzle olive oil over the dried wings and toss to coat evenly.
  2. Mix the dry rub ingredients together in a small bowl.
  3. Sprinkle the dry rub over the oiled wings and toss until fully coated.
Baking
  1. Arrange the seasoned wings in a single layer on the wire rack.
  2. Bake in the preheated oven for 45-50 minutes until golden and crispy.
  3. Let the wings rest for about 3 minutes before serving.

Notes

For best results, use a wire rack to allow heat circulation for crispiness. Serve with celery and carrot sticks, or ranch/blue cheese for dipping.
