  • 4 fillets cod fillets (about 6 ounces or 170 grams each) Fresh or frozen cod can be used.
  • 4 tablespoons unsalted butter, melted
  • 2 tablespoons fresh lemon juice Fresh juice preferred.
  • 1 teaspoon lemon zest
  • 2 cloves garlic, minced
  • 1 tablespoon chopped fresh parsley For flavor and garnish.
  • 1 teaspoon paprika
  • ½ teaspoon onion powder
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • 1 tablespoon olive oil For greasing the baking dish.
  • Lemon slices optional for garnish
  • Extra parsley optional for garnish

Method
 

Preparation
  1. Preheat your oven to 400°F (200°C) and lightly grease a baking dish with olive oil.
  2. Pat each cod fillet completely dry with paper towels and arrange the fillets in the prepared baking dish.
Make the Lemon Butter Sauce
  1. In a small bowl, combine melted butter, lemon juice, lemon zest, garlic, paprika, onion powder, salt, black pepper, and chopped parsley. Whisk until smooth.
Coat and Bake
  1. Brush or spoon the lemon butter mixture over every fillet, ensuring all areas are coated.
  2. Bake for 15 to 18 minutes, until the fish flakes easily with a fork and reaches an internal temperature of 145°F (63°C).
Garnish and Serve
  1. Top the baked cod with fresh parsley and lemon slices. Spoon any remaining butter sauce from the pan over each serving and serve immediately.

For best results, remember to dry the fish thoroughly, avoid overcooking, and feel free to experiment with sides such as asparagus, mashed potatoes, or a garden salad.
