Ingredients
  

For the cheese sticks
  • 12 ounces Low-moisture mozzarella cheese, block-style Use block mozzarella for best results.
  • 1/2 cup All-purpose flour
  • 2 large Eggs Whisked for coating.
  • 1 cup Breadcrumbs
Seasonings
  • 1/2 teaspoon Salt
  • 1/4 teaspoon Black pepper
  • 1/2 teaspoon Garlic powder
  • 1 teaspoon Italian seasoning

Method
 

Preparation
  1. Preheat your oven to 400 degrees Fahrenheit and line a baking sheet with parchment paper.
  2. Set up three shallow dishes: one with flour, one with whisked eggs, and one with breadcrumbs mixed with salt, pepper, garlic powder, and Italian seasoning.
  3. Slice the mozzarella into sticks about one inch wide and three to four inches long.
Coating
  1. Roll each mozzarella stick in the flour, ensuring a light, even coating.
  2. Dip the flour-coated stick in the whisked egg, then roll in the breadcrumb mixture, pressing gently for the crumbs to adhere.
  3. Repeat the egg and breadcrumb coating on each stick for extra protection against leaks.
Baking
  1. Place the coated sticks on the prepared baking sheet, spaced about an inch apart.
  2. Optionally, freeze the sticks for 30 minutes before baking to firm them up.
  3. Bake in the preheated oven for 8 to 10 minutes, flipping halfway through for even browning.
  4. Once golden brown and bubbly, remove from oven and let them rest for 2 minutes before serving.

Notes

For best results, always use low-moisture, block-style mozzarella. Double coat the sticks and freeze before baking for minimal leaks. Serve immediately for optimal gooeyness.
