Ingredients
  

Filling
  • 2 cups fresh spinach, chopped
  • 1 cup crumbled feta cheese
  • 1 sheet puff pastry, thawed Ensure fully thawed
  • 2 cloves garlic, minced
  • 1 tablespoon extra virgin olive oil
  • Salt and pepper, to taste Keep in mind that feta is already salty
Optional Add-Ins
  • 1 tablespoon fresh dill or parsley, chopped For added flavor
  • 1/4 teaspoon red pepper flakes For heat
  • 1/4 cup ricotta or mozzarella For extra creaminess
  • 1/4 cup cooked, crumbled bacon or sausage

Method
 

Preparation
  1. Preheat the oven to 400°F (200°C).
  2. Chop the spinach, mince the garlic, and measure out the feta.
Sautéing
  1. Heat the olive oil in a skillet over medium heat. Add minced garlic and sauté for about 30 seconds.
  2. Add chopped spinach and cook until wilted, about 2-3 minutes. Remove from heat and let cool slightly.
Mixing the Filling
  1. In a bowl, combine sautéed spinach and crumbled feta. Mix and season with salt and pepper.
  2. Taste the filling and adjust seasoning if necessary.
Preparing the Puff Pastry
  1. Roll out the thawed puff pastry on a lightly floured surface until smooth.
  2. Cut the pastry into three-inch squares.
Assembling the Bites
  1. Place about 1 tablespoon of filling in the center of each pastry square.
  2. Fold each square into a triangle and seal the edges with a fork.
  3. Arrange on a parchment-lined baking sheet.
Baking
  1. Bake in the preheated oven for 15-20 minutes until golden brown.
  2. Let cool for a few minutes before serving.

Notes

These bites can be frozen before baking. Bake from frozen, adding extra time as needed. They can also be made ahead and stored in the fridge for up to a day before baking.
