  • 4 pieces boneless, skinless chicken breasts
  • 2 tablespoons olive oil Use extra virgin for better flavor
  • 1 teaspoon Italian seasoning
  • 1 teaspoon garlic powder
  • Salt and pepper, to taste
  • 1 cup cherry tomatoes, halved
  • 1 cup fresh spinach, chopped
  • 1/2 cup shredded mozzarella cheese Fresh mozzarella melts better
  • 1/4 cup grated Parmesan cheese
  • Fresh basil, for garnish
Optional Add-Ins
  • 1/2 teaspoon red pepper flakes For heat
  • 1/4 cup sun-dried tomatoes For richness
  • 1/2 cup chopped artichoke hearts

Method
 

Preparation
  1. Preheat the oven to 400°F (200°C).
  2. Pat the chicken breasts dry with a paper towel.
  3. In a small bowl, mix the olive oil, Italian seasoning, garlic powder, salt, and pepper into a paste. Rub the mixture over every side of the chicken.
  4. Halve the cherry tomatoes and chop the spinach.
  5. If using, toss a pinch of red pepper flakes into the tomatoes.
Cooking
  1. Arrange the seasoned chicken breasts in a greased baking dish.
  2. Scatter the halved tomatoes and chopped spinach around the chicken.
  3. Sprinkle mozzarella and Parmesan cheese evenly across the top.
  4. Bake for 25 to 30 minutes until the chicken's internal temperature reaches 165°F (75°C) and the cheese is golden.
  5. Let the chicken rest for 5 minutes before slicing.

Notes

Leftovers can be stored in an airtight container in the fridge for up to three days. Reheat gently in the microwave or low oven. This dish can also be served cold over a salad.
