Beef Burrito Casserole

Ingredients
  

For the filling
  • 1 pound ground beef
  • 1 cup onion, chopped
  • 1 ounce taco seasoning (one packet or 2 tablespoons)
  • 16 ounces refried beans (about 2 cups)
  • 10.5 ounces condensed cream of chicken soup (undiluted)
  • 3/4 cup sour cream
  • 10 large flour tortillas, cut in half
For the toppings
  • 2 cups mild cheddar cheese, shredded
  • 1 cup pepper jack cheese, shredded
  • 1/4 cup cilantro, chopped
  • 1 unit lime

Method
 

Preparation
  1. Cook the ground beef and chopped onion in a heavy pan over medium heat until browned and the onion is soft.
  2. Drain excess fat, stir in refried beans and taco seasoning, mixing thoroughly.
  3. Squeeze lime juice over the mixture and stir in chopped cilantro. Set aside.
  4. Prep your 13x9-inch baking dish by spraying with nonstick cooking spray.
  5. In a large bowl, mix cream of chicken soup and sour cream until smooth.
  6. Layer the sour cream mixture in the bottom of the prepared dish, followed by tortillas, beef mixture, and shredded cheese.
  7. Repeat the layering process, ending with a final layer of cheese on top.
Baking
  1. Cover and refrigerate if making ahead for up to 2 days.
  2. Preheat the oven to 350°F and bake uncovered for 20 minutes fresh or 30 minutes if refrigerated.
  3. Let the casserole rest for 5 to 10 minutes before serving.

Notes

This casserole can be made ahead, freezes beautifully, and is easily customizable with different proteins and cheeses.
