Preparation
- Cook the ground beef and chopped onion in a heavy pan over medium heat until browned and the onion is soft.
- Drain excess fat, stir in refried beans and taco seasoning, mixing thoroughly.
- Squeeze lime juice over the mixture and stir in chopped cilantro. Set aside.
- Prep your 13x9-inch baking dish by spraying with nonstick cooking spray.
- In a large bowl, mix cream of chicken soup and sour cream until smooth.
- Layer the sour cream mixture in the bottom of the prepared dish, followed by tortillas, beef mixture, and shredded cheese.
- Repeat the layering process, ending with a final layer of cheese on top.
Baking
- Cover and refrigerate if making ahead for up to 2 days.
- Preheat the oven to 350°F and bake uncovered for 20 minutes fresh or 30 minutes if refrigerated.
- Let the casserole rest for 5 to 10 minutes before serving.
Notes
This casserole can be made ahead, freezes beautifully, and is easily customizable with different proteins and cheeses.
