Method
Cooking the Beef
- Heat large skillet over medium-high heat. Add ground beef directly to pan.
- Break beef into small crumbles with wooden spoon. Cook for 5-7 minutes.
- Drain excess fat if needed, leaving about 1 tablespoon.
- Add diced onion to browned beef. Cook together for 3-4 minutes until onion softens.
- Toss in minced garlic. Cook for 30 seconds until fragrant.
- Sprinkle taco seasoning over beef mixture. Stir to coat everything evenly.
- Pour in beef broth or water. Simmer for 5 minutes until liquid reduces. Taste and adjust seasoning.
Preparing Other Components
- Warm refried beans in microwave or small saucepan until smooth and creamy.
- Use leftover or freshly cooked rice. Make sure it's warm.
- Dice tomatoes, shred lettuce, and grate cheese if needed.
- Warm tortillas in a damp paper towel in the microwave or in a dry skillet.
Assembling Perfect Burritos
- Place warmed tortilla on work surface in diamond shape. Spread 1/4 cup warm refried beans in center.
- Add 1/2 cup rice over beans and 1/4 of seasoned beef over rice.
- Sprinkle cheese, add sour cream, salsa, lettuce, tomatoes, in that order.
- Fold bottom edge of tortilla over filling, tuck it tightly, and fold both sides inward.
- Roll towards yourself, keeping everything tight. Heat skillet over medium and toast burrito seam-side down for 2-3 minutes until golden brown.
Notes
To store burritos, wrap individually in aluminum foil and refrigerate for up to 3 days or freeze for up to 2 months. Reheat as desired.
