Ingredients
  

For the Broth
  • 6 cups beef broth
  • 2 cups water
  • 3 tablespoons soy sauce
  • 2 tablespoons mirin
  • 1 tablespoon sesame oil
  • 4 cloves garlic, minced
  • 1 inch piece fresh ginger, sliced
  • 2 pieces star anise
  • 1 stick cinnamon
For the Beef
  • 1 pound beef sirloin or ribeye, thinly sliced
  • 2 tablespoons soy sauce
  • 1 tablespoon brown sugar
  • 1 teaspoon cornstarch
  • 1 teaspoon sesame oil
  • 2 cloves garlic, minced
For the Noodles and Toppings
  • 16 ounces fresh or dried ramen noodles
  • 4 pieces soft-boiled eggs
  • 2 cups baby bok choy
  • 1 cup sliced mushrooms
  • 4 pieces green onions, sliced
  • nori sheets (optional)
  • sesame seeds for garnish

Method
 

Preparation of Beef
  1. Slice beef against the grain into thin strips and marinate with soy sauce, brown sugar, cornstarch, sesame oil, and minced garlic for at least 15 minutes.
Building the Broth Base
  1. Heat sesame oil in a large pot over medium heat, add minced garlic and sliced ginger, and sauté for about 1 minute.
  2. Pour in beef broth and water, add soy sauce and mirin, and drop in star anise and cinnamon stick. Let it simmer for 15-20 minutes.
  3. Remove ginger slices, star anise, and cinnamon stick before serving.
Cooking the Perfect Eggs
  1. Boil water and gently lower eggs in. Set timer for 6 minutes and 30 seconds, then prepare an ice bath.
  2. Once done, transfer eggs to ice water for 5 minutes, peel carefully, and slice in half.
Preparing the Vegetables
  1. Wash and trim bok choy, slice mushrooms, and chop green onions, separating white and green parts.
Cooking the Noodles and Beef
  1. Boil water for noodles and cook according to package instructions, then drain.
  2. Sear marinated beef in a hot skillet until caramelized, about 1-2 minutes per side.
Assembling Your Bowls
  1. Place cooked noodles in bowls, ladle hot broth over them, and add bok choy and mushrooms.
  2. Arrange sliced beef, top with soft-boiled eggs, sprinkle green onions, sesame seeds, and drizzle with sesame oil before serving hot.

Notes

Customize with additional toppings like chili oil or use rotisserie chicken for a shortcut. Store broth, noodles, and toppings separately for best quality.
