Ingredients
  

For the Onion Rings
  • 2 large sweet onions, sliced into 1/4 to 1/2-inch rings Vidalia or regular yellow or white onions work well.
  • 1.5 cups all-purpose flour Use for the beer batter.
  • 1 teaspoon baking powder
  • 1 teaspoon salt, plus more to taste
  • 0.5 teaspoon black pepper
  • 12 ounces beer (ale or lager) Avoid stouts and IPAs to keep flavors balanced.
  • 1 tablespoon Worcestershire sauce Essential for flavor.
  • as needed Oil, for frying Use a high smoke point oil.
For the Dipping Sauce
  • 0.5 cup mayonnaise
  • 2 tablespoons ketchup
  • 1 teaspoon Worcestershire sauce
  • 0.5 teaspoon paprika
  • 0.25 teaspoon garlic powder
  • a pinch of cayenne pepper, optional Add for some heat.

Method
 

Preparation
  1. In a large mixing bowl, whisk together the flour, baking powder, salt, and pepper until evenly combined.
  2. Pour in the beer and Worcestershire sauce, then whisk until the batter is smooth.
  3. Cover the bowl and let the batter rest at room temperature for about 30 minutes.
Onion Preparation
  1. Slice the onions into thick rings of 1/4 to 1/2-inch wide and separate them individually.
  2. Pat each onion ring dry with a paper towel to remove excess moisture.
Cooking
  1. Heat oil in a skillet or deep pot to 350°F - 365°F.
  2. Prepare a cooling station with a wire rack lined with paper towels.
  3. Dip each onion ring into the batter, then fry in small batches until golden brown on both sides.
  4. Use metal tongs to transfer finished onion rings to the wire rack to drain excess oil.
Dipping Sauce
  1. Mix together the mayonnaise, ketchup, Worcestershire sauce, paprika, garlic powder, and optional cayenne pepper in a bowl until smooth.
  2. Refrigerate until ready to serve.

Notes

Avoid overcrowding the frying oil for the best texture. Experiment with different dipping sauces, including ranch, remoulade, or barbecue.
