Preparation
- Prep every ingredient before you turn on the stove. Measure out your butter, flour, beer, milk, and shredded cheeses. Set your mustard, garlic powder, and paprika nearby.
Cooking
- Step 1: Make Your Roux - Place a medium saucepot over medium heat and add your butter. Let it melt completely, swirling the pot occasionally.
- Step 2: Slowly Add the Beer - Whisk in the flour until smooth and slightly golden, about a minute. Gradually pour in your beer while whisking to avoid lumps.
- Step 3: Let It Simmer Briefly - Bring to a gentle simmer over medium heat for about a minute before reducing to medium-low.
- Step 4: Add the Cheese Gradually - Add shredded cheese one handful at a time, stirring continuously until melted before adding more.
- Step 5: Stir in Milk, Mustard, and Seasonings - Pour in the milk, Dijon mustard, garlic powder, and paprika. Stir until fully combined.
- Step 6: Bring to a Gentle Simmer and Remove from Heat - Let it come back to a gentle simmer, stirring frequently, then remove from heat.
- Step 7: Serve Right Away - Pour into a serving bowl, sprinkle with extra paprika for color, and enjoy immediately.
Notes
For a gluten-free version, use certified gluten-free beer and a gluten-free flour blend or cornstarch slurry instead of flour.
