Ingredients
  

For the Tacos
  • 1 pound ground beef (preferably 80/20) Use 80/20 for best texture and flavor.
  • 8 small flour tortillas Use flour tortillas for better hold.
  • 1 teaspoon kosher salt
  • 1/2 teaspoon black pepper
  • 8 slices American cheese Gives the classic, glossy melt.
  • 3/4 cup shredded iceberg lettuce Adds crunch and freshness.
  • 1/2 cup dill pickle chips Essential for Big Mac flavor.
  • 1/4 cup finely chopped white onion
  • 1 tablespoon neutral oil for frying
For the Special Sauce
  • 3/4 cup mayonnaise Base of the sauce.
  • 3 tablespoons ketchup
  • 2 tablespoons yellow mustard
  • 2 tablespoons sweet pickle relish
  • 1 teaspoon white vinegar
  • 1/2 teaspoon paprika
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder

Method
 

Make the Special Sauce
  1. In a small mixing bowl, combine 3/4 cup mayonnaise, 3 tablespoons ketchup, and 2 tablespoons yellow mustard. Mix until smooth.
  2. Add 2 tablespoons sweet pickle relish and 1 teaspoon white vinegar, then mix in 1/2 teaspoon paprika, garlic powder, and onion powder. Whisk until fully combined and smooth, then refrigerate.
Prepare the Beef on the Tortillas
  1. Divide the pound of ground beef into 8 portions of roughly 2 ounces each.
  2. Press each portion onto one side of a flour tortilla until evenly spread, reaching the edges.
  3. Generously season with kosher salt and black pepper before cooking.
Cook the Tacos
  1. Heat 1 tablespoon neutral oil in a large skillet over medium-high heat.
  2. Place the prepared tortilla beef-side down into the skillet, pressing with a spatula for 10-15 seconds.
  3. Cook for 3-4 minutes until browned, then flip and immediately add a slice of American cheese on top.
  4. Cook the tortilla side for another 1-2 minutes until golden brown and cheese is melted.
Assemble the Big Mac Tacos
  1. Fold each cooked taco in half with beef and cheese inside.
  2. Add shredded iceberg lettuce, dill pickle chips, and chopped onion.
  3. Finish with a generous drizzle of the special sauce and serve immediately.
