Dry Ingredients
  • 2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
Wet Ingredients
  • 1/2 cup butter softened
  • 1 cup sugar
  • 2 large eggs
  • 1/4 cup milk
  • 1 teaspoon vanilla extract
  • 3 medium ripe bananas mashed
Fruits
  • 1 cup fresh blueberries or frozen (do not thaw)

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C) and coat a 9x5 inch bread pan with cooking spray.
  2. In a medium bowl, whisk together the flour, baking powder, baking soda, and salt, then set aside.
  3. In a large bowl, beat the softened butter and sugar using an electric mixer until light and fluffy.
  4. Add the eggs, milk, and vanilla extract to the butter mixture, mixing until well combined. Then mix in the mashed bananas.
  5. Gradually add the flour mixture to the wet ingredients while mixing on low speed until just combined.
  6. Gently fold in the blueberries using a spatula.
Baking
  1. Pour the batter into the prepared bread pan, smoothing the top.
  2. Bake for 55 to 60 minutes or until a toothpick inserted comes out clean.
  3. Let the bread cool in the pan for about 15 minutes before transferring it to a wire rack.

Notes

For best results, use very ripe bananas and do not thaw frozen blueberries. Serve warm or at room temperature. Can be enjoyed with butter or honey. Store leftovers in an airtight container for up to 2 days at room temperature, or refrigerate for up to a week.
