Ingredients

  • 4 cups fresh or frozen blueberries
  • cups granulated sugar
  • 1 tablespoon lemon zest
  • 3 tablespoons lemon juice Important for setting
  • ¼ teaspoon salt

Method
 

Preparation
  1. Combine the blueberries and sugar in a medium saucepan.
  2. Add lemon zest, lemon juice, and salt on top.
  3. Stir gently to combine, allowing the sugar to dissolve for a minute or two.
Cooking
  1. Place the saucepan over medium-high heat and stir frequently.
  2. Once boiling, keep stirring and skim off any foam that forms.
  3. Reduce heat to low and let simmer for 15-18 minutes, stirring occasionally.
  4. Test for thickness using a chilled plate; the jam should wrinkle when pushed.
Cooling and Storing
  1. Remove from heat and let cool in the pan for 10 minutes.
  2. Transfer to clean glass jars, leaving space at the top and screw on lids.
  3. Refrigerate for at least 24 hours to thicken further.

Notes

Use plump, deeply colored blueberries for best flavor. Label jars with dates for easy tracking.
