Preparation
- Combine the blueberries and sugar in a medium saucepan.
- Add lemon zest, lemon juice, and salt on top.
- Stir gently to combine, allowing the sugar to dissolve for a minute or two.
Cooking
- Place the saucepan over medium-high heat and stir frequently.
- Once boiling, keep stirring and skim off any foam that forms.
- Reduce heat to low and let simmer for 15-18 minutes, stirring occasionally.
- Test for thickness using a chilled plate; the jam should wrinkle when pushed.
Cooling and Storing
- Remove from heat and let cool in the pan for 10 minutes.
- Transfer to clean glass jars, leaving space at the top and screw on lids.
- Refrigerate for at least 24 hours to thicken further.
Notes
Use plump, deeply colored blueberries for best flavor. Label jars with dates for easy tracking.
