- Process the chopped carrots, onion, celery, and garlic in a food processor until coarsely chopped.
- Process the pancetta until coarsely chopped.
Cooking Steps
- Crisp the pancetta in a large skillet over medium-high heat for 5-6 minutes until golden.
- Brown the ground beef in the same skillet, breaking it into small crumbles until no pink remains.
- Mix in the processed vegetables and pancetta, adding a splash of chicken broth to deglaze the pan.
- Stir in the crushed tomatoes, tomato paste, and remaining chicken broth. Reduce heat to low.
- Simmer uncovered for about 2 hours, stirring occasionally.
- During the last 15 minutes, stir in the whole milk.
- Season with salt and pepper to taste.
- Serve warm over pasta.
Notes
This Bolognese Sauce improves with time. Store leftovers in an airtight container in the refrigerator for up to 4 days or freeze for up to 3 months.
