Preparation
- Cut the chicken breasts into bite-sized pieces, ensuring uniform size.
- In the first bowl, combine flour, cornstarch, garlic powder, salt, pepper, and paprika.
- In a second bowl, whisk together the eggs and buttermilk.
- Dredge the chicken pieces first in the flour mixture, then dip in the egg mixture, and return to the flour for a second coating.
- Chill the breaded chicken pieces on a parchment-lined baking sheet for 10-15 minutes.
Cooking
- Heat oil in a deep fryer or Dutch oven to 350°F.
- Fry chicken in small batches for 5-6 minutes, flipping halfway through.
- Drain fried chicken on paper towels.
- In a saucepan, melt butter and whisk in hot sauce, honey, and garlic until combined.
- Toss the fried chicken in the buffalo sauce until fully coated.
- Serve immediately with dressing on the side.
Notes
For extra crunch, double bread the chicken by increasing flour and egg mixture quantities. Ensure oil temperature stays at 350°F for best results. Can serve with celery, carrot, and cucumber sticks, and various dipping sauces.
