Preparation
- Preheat your oven to 350 degrees Fahrenheit. Wash and dry the russet potatoes thoroughly.
- Poke several holes into each potato using a fork, wrap them in aluminum foil, and set them on a baking sheet.
Baking Potatoes
- Bake the potatoes in the preheated oven for a full hour, or until fork-tender.
Prepare the Filling
- While the potatoes bake, combine chopped brisket, barbecue sauce, and beef broth in a small saucepan over low heat. Stir occasionally for about 10 minutes.
Scoop and Mix
- Once potatoes are cool enough to handle, unwrap and slice the top of each potato. Scoop out the interior into a mixing bowl, leaving a thin layer of potato inside the skin.
- Add butter and half of the shredded cheddar cheese to the scooped potato and stir until creamy.
Refilling Potatoes
- Spoon the creamy potato mixture back into the skins. Top each filled potato with the warm brisket filling and remaining cheddar cheese.
- Drizzle extra barbecue sauce on top and add crispy onion strings if desired.
Final Baking
- Return the loaded potatoes to the oven for 5 minutes until the cheese is melted.
- Serve hot and enjoy with extra barbecue sauce on the side.
Notes
For the best results, dry potatoes thoroughly before baking, and avoid over-scooping the potato flesh. The brisket should be warmed gently.
