Preparation
- Whisk the dry ingredients in a large bowl: flour, baking powder, baking soda, salt, cinnamon, and brown sugar until fully combined.
- In a separate bowl, whisk the eggs until light and frothy. Then add melted butter, vanilla extract, and buttermilk, mixing until smooth.
- Pour the wet ingredients into the dry ingredients and gently fold until just combined. A few lumps are fine; do not overmix.
- Fold in the chopped peaches carefully.
Cooking
- Preheat the griddle to around 350°F or heat a nonstick pan over medium heat. Lightly grease with butter or cooking spray.
- Scoop about 1/4 cup of batter onto the griddle for each pancake, spacing them out.
- Cook until small bubbles form on the surface, about 2-4 minutes. Flip and cook for an additional 2 minutes until golden brown.
- Keep finished pancakes warm in a low oven (around 200°F) while you finish cooking the rest.
Notes
Let the buttermilk sit out for 20 minutes to achieve fluffy pancakes. Overmixing can lead to tough pancakes; a slightly lumpy batter is acceptable.
