Preparation
- Line two large baking sheets with waxed paper before starting.
- Measure out all ingredients and have them ready.
Cooking
- Combine buttermilk, granulated sugar, light corn syrup, baking soda, and salt in a large pot.
- Heat on medium and stir constantly until the mixture comes to a boil.
- Once boiling, clip a candy thermometer to the pot and watch until it reaches 236°F (soft-ball stage).
- If no thermometer is available, drop a small bit into cold water to test for soft-ball consistency.
- Remove from heat and stir in pecan halves, vanilla, and butter.
- Beat the mixture with a wooden spoon until it thickens and loses its glossy shine.
- Drop spoonfuls onto the prepared waxed paper, spacing them a few inches apart.
- Let sit for about 30 minutes until fully set.
Notes
Stir constantly during heating to prevent scorching. Use a large pot to avoid boilover. Don't stop beating the mixture too early for the right texture.
