Preparation
- Preheat your oven to 350°F (175°C).
- In a medium bowl, whisk together the flour, baking soda, and salt, then set aside.
- In a large bowl, beat the softened butter with both the granulated sugar and brown sugar until pale and fluffy, about 2 to 3 minutes.
- Add the eggs one at a time, beating well after each addition, then stir in the vanilla extract.
- Gradually add the dry ingredients to the wet ingredients until just combined.
- Fold in the butterscotch chips and semi-sweet chocolate chips gently.
- Scoop the dough into balls and space them 2 inches apart on a lined baking sheet.
- Optional: Chill the dough balls for 20 to 30 minutes before baking.
Baking
- Sprinkle sea salt on top of each dough ball before baking.
- Bake for 10 to 12 minutes, until the edges are golden but the centers are slightly underbaked.
- Let the cookies rest on the baking sheet for about 5 minutes before transferring to a wire rack to cool.
Notes
For thick cookies, chill the dough before baking. Store baked cookies in an airtight container at room temperature. Can freeze the dough for later use.
