  • 1 cup unsalted butter, softened Use room temperature butter, not melted.
  • ¾ cup granulated sugar
  • ¾ cup brown sugar, packed
  • 1 teaspoon vanilla extract
  • 2 large eggs Use room temperature eggs.
  • 1 cup butterscotch chips Can substitute with white chocolate chips.
  • 1 cup semi-sweet chocolate chips Choose a quality brand for best results.
  • Sea salt to taste sea salt, for sprinkling A pinch on top enhances flavor.
Optional Add-Ons
  • ½ cup chopped walnuts or pecans For extra crunch.
  • ½ cup shredded coconut For added chew.
  • ½ teaspoon cinnamon For added warmth.

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C).
  2. In a medium bowl, whisk together the flour, baking soda, and salt, then set aside.
  3. In a large bowl, beat the softened butter with both the granulated sugar and brown sugar until pale and fluffy, about 2 to 3 minutes.
  4. Add the eggs one at a time, beating well after each addition, then stir in the vanilla extract.
  5. Gradually add the dry ingredients to the wet ingredients until just combined.
  6. Fold in the butterscotch chips and semi-sweet chocolate chips gently.
  7. Scoop the dough into balls and space them 2 inches apart on a lined baking sheet.
  8. Optional: Chill the dough balls for 20 to 30 minutes before baking.
Baking
  1. Sprinkle sea salt on top of each dough ball before baking.
  2. Bake for 10 to 12 minutes, until the edges are golden but the centers are slightly underbaked.
  3. Let the cookies rest on the baking sheet for about 5 minutes before transferring to a wire rack to cool.

Notes

For thick cookies, chill the dough before baking. Store baked cookies in an airtight container at room temperature. Can freeze the dough for later use.
