Ingredients
  

For the Marinated Steak
  • 1.5 pounds skirt steak
  • 0.25 cup olive oil
  • 0.25 cup orange juice
  • 2 tablespoons lime juice
  • 3 cloves garlic, minced
  • 2 tablespoons chopped fresh cilantro
  • 1 teaspoon ground cumin
  • 1 teaspoon dried oregano
  • 1 teaspoon chili powder
  • 1 teaspoon kosher salt
  • 0.5 teaspoon black pepper
  • 0.25 teaspoon cayenne pepper, optional
  • 1 tablespoon soy sauce or Worcestershire sauce
For Assembly
  • 1 20-ounce bag frozen French fries
  • 4 large flour tortillas
  • 2 cups shredded cheddar cheese
  • 1 cup guacamole
  • 1 cup pico de gallo
  • 0.5 cup sour cream or Mexican crema, optional
  • 0.5 cup salsa, optional

Method
 

Preparation
  1. In a large mixing bowl, combine the olive oil, orange juice, lime juice, minced garlic, cilantro, cumin, oregano, chili powder, salt, black pepper, and optional cayenne and soy sauce. Whisk everything together thoroughly.
  2. Add the skirt steak to the marinade, ensuring each surface is coated. Cover and refrigerate for 2 to 3 hours.
Cook the French Fries
  1. Prepare your French fries according to the package instructions for golden crispiness.
Cook the Steak
  1. Heat a heavy-bottomed skillet over medium-high heat. Remove the steak from the marinade and let excess liquid drip off. Sear the steak for 2 to 3 minutes per side.
  2. Transfer the seared steak to a cutting board and let it rest for about 10 minutes.
Assembly
  1. Slice the rested steak against the grain into thin, bite-sized strips.
  2. Warm each flour tortilla and layer with sliced steak, crispy fries, cheddar cheese, guacamole, and pico de gallo.
  3. Roll the tortilla tightly and optionally grill it seam-side down in a hot skillet.
Serve
  1. Slice the finished burrito in half diagonally and serve with sour cream, extra fries, and salsa.
