A quick and delicious oven-roasted version of the classic Caprese salad made with juicy tomatoes, fresh mozzarella, basil, and balsamic glaze.

Ingredients
  

For the Baked Tomatoes
  • 4 large beefsteak or heirloom tomatoes
  • 2 tablespoons extra virgin olive oil
  • 3 cloves fresh garlic, minced
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/2 teaspoon dried oregano
  • 1/4 teaspoon red pepper flakes (optional)
For the Caprese Topping
  • 8 oz fresh mozzarella, sliced into 1/4-inch rounds
  • 1/4 cup freshly grated parmesan (optional) Highly recommended
  • 1/4 cup fresh basil leaves
  • 2 tablespoons balsamic glaze (store-bought or homemade)
  • 1 tablespoon extra virgin olive oil, for finishing
Optional Extras
  • 1/4 cup sun-dried tomatoes, chopped For extra depth
  • 1 teaspoon fresh thyme leaves
  • Flaky sea salt for finishing

Method
 

Preparation
  1. Preheat your oven to 400°F (200°C) and line a baking dish with parchment paper.
  2. Wash and dry the tomatoes thoroughly and slice them horizontally into two equal halves.
  3. Scoop out the watery seed pockets in the center of each tomato half.
  4. Combine olive oil, minced garlic, salt, black pepper, oregano, and red pepper flakes in a bowl.
  5. Brush the garlic oil mixture generously over each tomato half.
First Roast
  1. Place the dressed tomatoes in the oven and roast for 12 to 15 minutes, until tender.
  2. Check for doneness and drain any excess liquid if needed.
Add Cheese
  1. Top each tomato half with mozzarella and sprinkle with parmesan if using.
  2. Return to the oven and roast for an additional 5 to 7 minutes until the cheese melts.
  3. Broil for the last 60 to 90 seconds for a golden finish if desired.
Finish and Serve
  1. Add fresh basil leaves and drizzle with balsamic glaze and olive oil.
  2. Serve immediately while warm.

Notes

Use only fresh mozzarella for the authentic Caprese flavor. Add fresh basil after baking to retain its freshness.
