Cheeseburger Egg Rolls

These cheeseburger egg rolls turn a classic burger into a crispy, handheld party favorite everyone fights over.

Ingredients
  

Main Ingredients
  • 1 pound Ground beef, 90/10 ratio Use lean ground beef to prevent greasiness.
  • 1/2 small Yellow onion, diced Sautéed to build flavor.
  • 8 ounces American cheese, cubed or grated Sliced cheese also works.
  • 1/2 cup Dill pickles, diced Essential for the cheeseburger flavor.
  • 12 Egg roll wrappers Must be egg roll wrappers, not spring rolls.
  • 1 Egg white, whisked Used to seal the egg rolls.
  • Salt and pepper, to taste
  • for frying Vegetable oil Use for deep frying.
Dipping Sauce
  • 1/4 cup Mayonnaise
  • 2 tablespoons Ketchup
  • 1 tablespoon Yellow mustard
  • 1 teaspoon Dill pickle juice

Method
 

Preparation
  1. Heat a splash of oil in a medium pan over medium heat. Add diced onion and sauté until soft and translucent, about 3-4 minutes.
  2. Add ground beef to the pan with the onion. Break it apart while it cooks, seasoning with salt and pepper. Cover and cook until completely done, stirring occasionally.
  3. Drain excess grease from the cooked beef and transfer to a mixing bowl while hot.
  4. Mix in cubed or grated American cheese until melted and evenly distributed.
  5. Fold in the diced dill pickles and adjust seasoning if necessary. Set the filling aside to cool slightly.
  6. In a small bowl, whisk together mayonnaise, ketchup, yellow mustard, and pickle juice for the dipping sauce. Refrigerate until ready to serve.
  7. Heat vegetable oil in a deep pot to 350°F.
  8. Whisk the egg white and set up your rolling station with a cooling rack lined with paper towels.
Rolling and Frying
  1. Place an egg roll wrapper in a diamond shape on your work surface. Spoon about two tablespoons of filling across the center.
  2. Fold the bottom corner over the filling and tuck it snugly underneath.
  3. Seal the edges with egg white and roll tightly, folding in the side corners.
  4. Fry the egg rolls in small batches in preheated oil, cooking about 4-5 minutes until golden brown.
  5. Remove and place on a paper towel-lined rack to drain excess oil.
  6. Serve warm with the prepared dipping sauce.

Notes

For a lighter option, use air frying at 390°F for 9-11 minutes or bake at 425°F for about 15 minutes. Store leftovers in an airtight container for 3-4 days.
