Method
Preparation of Base
- Prepare the vanilla cake mix according to package directions. Pour the batter into a lightly greased 9×13-inch sheet pan and bake until a toothpick comes out clean, usually around 25–30 minutes.
- Let the cake cool completely before cutting it into bite-sized squares.
Making the Filling
- In a large mixing bowl, beat the softened cream cheese until smooth. Add powdered sugar and vanilla extract, mixing until fluffy.
- In a separate bowl, whisk together the instant banana pudding mix and cold milk until it begins to thicken, then fold into the cream cheese mixture along with the whipped topping.
Assembling the Bites
- Take your cooled cake squares and spoon or pipe the cheesecake banana pudding filling generously on top.
- Sprinkle the crushed vanilla wafers on the filling and place a fresh banana slice on each bite.
Chilling
- Cover the assembled bites with plastic wrap and refrigerate for at least 2 hours to set.
Notes
For best results, slice bananas right before serving to prevent browning. You can freeze the assembled bites without the banana topping for up to 1 month.
