Preparation
- Preheat the oven to 375°F (190°C) for at least 10 minutes.
- In a small bowl, mix chili powder, cumin, paprika, garlic powder, onion powder, salt, and pepper. Rub this spice blend over both sides of each chicken breast.
- If possible, marinate the seasoned chicken in the fridge for 30 minutes.
Cooking
- Heat olive oil in a large oven-safe skillet over medium-high heat. Sear the chicken breasts for 3 to 4 minutes per side until golden brown. Remove and set aside.
- In the same skillet, sauté the sliced peppers and onion for 4 to 5 minutes until they soften.
- Nestle the seared chicken breasts on top of the sautéed vegetables.
- Sprinkle shredded cheddar cheese over the chicken and vegetables. Optionally, add black beans, corn, or jalapeños.
- Transfer the skillet to the preheated oven and bake for 20 to 25 minutes until the chicken reaches an internal temperature of 165°F (75°C).
- Let the dish rest for a few minutes before serving.
Notes
Store leftovers in an airtight container in the fridge for up to three days. Reheat gently to keep cheese melty. This dish is adaptable; try different vegetables or proteins as desired.
