  • 2 cups Sweet corn kernels, stripped off the cob (or canned/frozen) Fresh corn gives the best flavor; canned or frozen must be drained/thawed well.
  • 1 cup Shredded cheddar cheese
  • 1 cup Panko breadcrumbs
  • 1/2 cup All-purpose flour
  • 1 large Egg
  • 1/4 cup Diced green onions
  • 1/4 cup Mayonnaise, sour cream, or Greek yogurt Pick your favorite.
  • 1 teaspoon Salt
  • 1/2 teaspoon Black pepper
  • 1/2 teaspoon Garlic powder
  • 1/2 teaspoon Onion powder

Preparation
  1. Preheat your air fryer to 375 degrees Fahrenheit and let it fully preheat.
  2. In a large mixing bowl, combine sweet corn, shredded cheddar, panko breadcrumbs, all-purpose flour, the egg, diced green onions, and your chosen creamy binder. Add salt, black pepper, garlic powder, and onion powder. Stir gently until combined.
  3. Check the texture; if it feels dry, add a bit more creamy binder. If it's too wet, add a touch more flour until you achieve a mixture that holds its shape.
  4. Scoop tablespoon-sized portions and roll them into balls, then flatten into discs about 1/2 inch thick.
  5. Place fritters in a single layer in the air fryer basket, ensuring some space between them.
  6. Cook for 8 minutes, flipping carefully halfway through to ensure even browning.
  7. Once golden and crispy, let them cool for a minute or two before serving.

Notes

These fritters pair wonderfully with ranch, spicy mayo, or garlic aioli. They can easily fit into any meal or be served as appetizers.
