Preparation
- Preheat the oven to 350°F (175°C) and position the oven rack in the middle.
- Heat olive oil in a large skillet over medium-high heat. Sear the ribeye steak in batches for 3-4 minutes, then remove from skillet.
- In the same skillet, sauté the onion, both bell peppers, garlic, and mushrooms for 5-7 minutes until softened.
- Meanwhile, cook the egg noodles according to the package instructions, then drain them.
- In a large mixing bowl, combine cooked noodles, seared steak, sautéed vegetables, beef broth, sour cream, Worcestershire sauce, and half of the provolone cheese. Mix well and season with salt and pepper.
Baking
- Transfer the mixture to a greased 9x13 baking dish and spread evenly.
- Top with the remaining provolone cheese.
- Bake for 25-30 minutes until cheese is bubbly and golden. Let it rest for 5-10 minutes before serving.
Notes
Leftovers can be stored in an airtight container in the fridge for up to three days. Reheat in the oven for best texture. This casserole also freezes well for up to three months.
