Preparation
- Preheat the oven to 375°F (190°C). Grease a 9x13 inch baking dish with butter or oil.
- Wash zucchini and yellow squash, then slice them into rounds about a quarter-inch thick. Toss the sliced vegetables in a large bowl with minced garlic, oregano, thyme, salt, and pepper.
Assembly
- In a separate bowl, combine heavy cream, cheddar, mozzarella, and half of the Parmesan. Whisk until smooth.
- Layer half of the seasoned zucchini and squash in the greased baking dish, pour half of the cheese mixture over the top. Repeat with the remaining vegetables and cheese mixture.
Topping and Baking
- In a small bowl, mix breadcrumbs, remaining Parmesan, and olive oil until coated. Sprinkle evenly over the layered casserole.
- Bake for 30 to 35 minutes until top is golden and vegetables are tender. Let it rest for 10 minutes before serving.
Notes
For best results, salt sliced squash and let sit for 10 minutes before patting dry to remove excess moisture. Optionally add red pepper flakes for heat. You can also customize with proteins or different vegetables as desired.
