Ingredients
  

For the crust
  • 1.5 cups graham cracker crumbs
  • 0.5 cups finely chopped pecans plus extra for garnish
  • 0.5 cups melted butter
For the cheesecake layer
  • 8 ounces cream cheese, softened
  • 1 cups powdered sugar
  • 1 teaspoon vanilla extract
  • 8 ounces whipped topping, divided
For the pudding layer
  • 2 boxes (3.4 ounces each) instant cheesecake pudding mix
  • 3 cups cold milk
For the topping
  • 21 ounces cherry pie filling

Method
 

Build the Pecan Crust
  1. Combine graham cracker crumbs, finely chopped pecans, and melted butter in a mixing bowl. Stir until coated.
  2. Press the mixture firmly into a 9x13-inch pan. Chill in the fridge for 15 minutes.
Whip Up the Cheesecake Layer
  1. Beat cream cheese, powdered sugar, and vanilla extract in a bowl until smooth.
  2. Fold in half of the whipped topping and spread the mixture evenly over the crust.
Make the Pudding Layer
  1. Whisk both boxes of instant cheesecake pudding mix with cold milk until thickened.
  2. Spoon the pudding over the cheesecake layer and smooth the surface.
Add the Cherry Topping
  1. Spoon cherry pie filling over the pudding layer, spreading it evenly.
  2. Sprinkle remaining chopped pecans and add dollops of remaining whipped topping.
Chill and Serve
  1. Cover tightly with plastic wrap and chill for at least 2 hours.
  2. Slice into squares and serve chilled.
