For the creamy chicken base
  • 3 cups Shredded cooked chicken Rotisserie chicken works great
  • 1 can Cream of chicken soup (10.5 ounces)
  • 1/2 cup Chicken broth
  • 1/2 cup Sour cream
  • 1/2 teaspoon Garlic powder
  • 1/2 teaspoon Onion powder
  • 1/2 teaspoon Dried thyme
  • 1/4 teaspoon Black pepper
For the stuffing topping
  • 3 cups Stuffing mix (about one 6-ounce box)
  • 1/3 cup Melted butter
Vegetables
  • 1.5 cups Frozen mixed vegetables No need to thaw before baking
Miscellaneous
  • Nonstick spray or butter For greasing the baking dish

Method
 

Preparation
  1. Preheat the oven to 350°F and grease a baking dish with nonstick spray or butter.
Build the Creamy Chicken Base
  1. In a large mixing bowl, combine the shredded chicken, cream of chicken soup, chicken broth, and sour cream. Mix until smooth.
  2. Add the garlic powder, onion powder, dried thyme, and black pepper, stirring until evenly distributed.
Prepare the Buttery Stuffing Topping
  1. In a separate bowl, combine dry stuffing mix with melted butter, tossing gently until lightly coated.
Layer the Chicken Mixture
  1. Spread the creamy chicken mixture evenly in the greased baking dish.
Add the Vegetable Layer
  1. Sprinkle frozen mixed vegetables evenly over the chicken layer.
Top Everything with the Stuffing Mix
  1. Spoon the buttered stuffing mixture over the vegetable layer, covering it loosely.
Bake Until Golden and Bubbling
  1. Bake in the preheated oven for 30 to 35 minutes until golden brown and bubbling.
Let It Rest
  1. Remove from oven and let it rest for 5 to 10 minutes before serving.

Notes
