Assembly
- Spread the cooked brown rice evenly at the bottom of the greased baking dish.
- Layer the chicken and bean mixture over the rice, ensuring it covers the rice completely.
- Drizzle salsa over the mixture and top with remaining shredded cheddar cheese.
Baking
- Cover the baking dish with aluminum foil and bake for 25 minutes.
- Remove foil and continue baking uncovered for an additional 10 to 15 minutes, until the cheese is bubbly and slightly golden.
Serving
- Let the casserole rest for 5 to 10 minutes before slicing. Drizzle with sour cream, sprinkle with fresh cilantro, and serve warm.
Notes
For faster prep, use rotisserie chicken. Drain canned beans and corn well to avoid excess moisture. Customize by adding jalapeños or cream cheese.
