  • 2 to 3 cups Chopped cooked chicken, rotisserie preferred Rotisserie chicken is recommended for best flavor.
  • 1 3/4 cups Chicken broth About one 14.5-ounce can.
  • 1/2 cup Unsalted butter One stick of butter.
  • 1 cup All-purpose flour
  • 1 1/4 teaspoons Baking powder
  • 1/4 teaspoon Salt
  • 1 cup Milk
  • 1 can Cream of chicken soup 10.5 ounces.

Method
 

Preparation
  1. Preheat the oven to 400°F (200°C) and prep a 9x13-inch baking pan with non-stick cooking spray.
  2. Melt the butter and pour it into the prepared baking pan, tilting to coat the bottom evenly.
  3. Scatter the chopped cooked chicken evenly over the melted butter in the pan.
  4. In a mixing bowl, whisk together the milk, flour, baking powder, and salt until smooth, then pour this batter over the chicken.
  5. In another bowl, whisk together the chicken broth and cream of chicken soup until smooth, and pour this mixture over the batter.
Baking
  1. Bake uncovered for 35 to 45 minutes until the top is deep golden brown and bubbling around the edges.
  2. Check for doneness with a toothpick; if it comes out clean, the casserole is ready.
Serving
  1. Let the casserole rest for about five minutes before serving for cleaner portions.
  2. Scoop generous portions onto plates, ensuring everyone gets chicken, dumplings, and creamy sauce.

For best results, use rotisserie chicken, preheat fully before baking, and resist the urge to stir the layers together.
