Ingredients
  

For the chicken
  • 2 large Chicken breasts, halved into cutlets About 1.5 pounds total
  • 1/2 cup All-purpose flour
  • 1/2 cup Parmesan cheese, grated, divided
  • 1 teaspoon Salt
  • 2 tablespoons Olive oil
  • 4 tablespoons Butter, divided
For the sauce
  • 3 cloves Garlic, minced
  • 1/2 cup Dry white wine Don't skip the white wine; it adds bright acidity.
  • 1 cup Chicken broth
  • 1 teaspoon Herbs de Provence or Italian seasoning
  • 1 cup Heavy cream
To finish
  • 3 cups Fresh spinach
  • Salt and pepper to taste

Method
 

Preparation
  1. Cut each chicken breast lengthwise to create thinner cutlets.
  2. In a shallow bowl, whisk together the flour, 1/4 cup of parmesan cheese, and salt. Dredge each cutlet in the mixture, coating both sides evenly.
Cooking the Chicken
  1. Heat a large skillet over medium-high heat and add olive oil and 2 tablespoons of butter. Let the butter melt completely.
  2. Carefully place the coated chicken cutlets into the hot skillet, cooking for 4 to 5 minutes per side, until golden brown and the internal temperature reaches 165°F.
  3. Transfer the cooked chicken to a plate and cover loosely with foil to keep warm.
Making the Sauce
  1. Lower the heat and add the remaining 2 tablespoons of butter to the skillet, scraping up any browned bits.
  2. Add the minced garlic and cook for 1 minute.
  3. Pour in the white wine and stir, allowing it to simmer for about 2 minutes.
  4. Add the chicken broth and herbs, and let the mixture simmer for 5 to 7 minutes to reduce.
  5. Add the heavy cream, stirring until the sauce thickens, about 2 to 3 minutes.
Final Assembly
  1. Stir in the fresh spinach until wilted, then add the remaining parmesan cheese.
  2. Adjust seasoning with salt and pepper.
  3. Nestle the chicken cutlets into the sauce and heat through for 1-2 minutes.
  4. Serve immediately.

Notes

Serve over pasta or creamy risotto. Pair with a green salad and light vinaigrette.
