A simplified version of classic Chicken Parmesan, this casserole combines tender shredded chicken, marinara sauce, pasta, and cheese, all baked in one dish for easy cleanup and delicious flavor.

Ingredients
  

For the Casserole
  • 3 cups cooked shredded chicken Rotisserie chicken works perfectly.
  • 2 cups marinara sauce Store-bought or homemade.
  • 3 cups cooked penne or rotini pasta About 8 oz dry.
  • 1.5 cups shredded mozzarella cheese Divided.
  • 1/2 cup freshly grated Parmesan cheese
  • 1 teaspoon Italian seasoning
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
For the Topping
  • 1/2 cup Italian-seasoned breadcrumbs
  • 1 tablespoon olive oil or cooking spray
  • 2 tablespoons fresh parsley, chopped Optional garnish.

Method
 

Preparation
  1. Preheat the oven to 375°F (190°C) and thoroughly grease a 9x13 inch baking dish.
Chicken Preparation
  1. If using a rotisserie chicken, shred the meat off the bones. If cooking chicken, season two large boneless breasts and bake at 400°F for 22 to 25 minutes, then shred.
Pasta Cooking
  1. Boil penne or rotini in salted water but remove it about 1 minute before the package instructions indicate.
  2. Drain the pasta and toss with a drizzle of olive oil to prevent sticking.
Filling Mix
  1. In a large mixing bowl, combine the shredded chicken, cooked pasta, marinara sauce, 1 cup of shredded mozzarella, grated Parmesan, Italian seasoning, garlic powder, salt, and black pepper.
  2. Mix until evenly combined, ensuring the sauce coats everything.
Assembly
  1. Pour the mixture into the greased baking dish and spread evenly. Top with remaining mozzarella.
  2. Sprinkle the breadcrumbs over the cheese, drizzle with olive oil.
Baking
  1. Cover with aluminum foil and bake for 15 minutes.
  2. Remove foil and bake uncovered for another 12 to 15 minutes until golden and bubbly.
Serving
  1. Let the casserole rest for 5 minutes before serving, garnished with fresh parsley.

Notes

Use rotisserie chicken for the best flavor and moisture. For a crispy topping, ensure breadcrumbs are oiled before baking. Can be assembled ahead of time and refrigerated overnight.
