Preparation
- Preheat the oven to 375°F (190°C) and thoroughly grease a 9x13 inch baking dish.
Chicken Preparation
- If using a rotisserie chicken, shred the meat off the bones. If cooking chicken, season two large boneless breasts and bake at 400°F for 22 to 25 minutes, then shred.
Pasta Cooking
- Boil penne or rotini in salted water but remove it about 1 minute before the package instructions indicate.
- Drain the pasta and toss with a drizzle of olive oil to prevent sticking.
Filling Mix
- In a large mixing bowl, combine the shredded chicken, cooked pasta, marinara sauce, 1 cup of shredded mozzarella, grated Parmesan, Italian seasoning, garlic powder, salt, and black pepper.
- Mix until evenly combined, ensuring the sauce coats everything.
Assembly
- Pour the mixture into the greased baking dish and spread evenly. Top with remaining mozzarella.
- Sprinkle the breadcrumbs over the cheese, drizzle with olive oil.
Baking
- Cover with aluminum foil and bake for 15 minutes.
- Remove foil and bake uncovered for another 12 to 15 minutes until golden and bubbly.
Serving
- Let the casserole rest for 5 minutes before serving, garnished with fresh parsley.
Notes
Use rotisserie chicken for the best flavor and moisture. For a crispy topping, ensure breadcrumbs are oiled before baking. Can be assembled ahead of time and refrigerated overnight.
