Chicken Sausages With Zucchini Tomatoes And Pasta

A quick, flavorful weeknight dinner that combines chicken sausages, fresh vegetables, and pasta in one skillet, ready in 35 minutes.

Ingredients
  

Pasta and Protein
  • 12 oz penne or fusilli pasta Penne works brilliantly; fusilli does too.
  • 4 pieces chicken sausages About 12–14 oz total.
  • 2 tbsp olive oil, divided Used for cooking.
Vegetables and Aromatics
  • 2 medium zucchini, sliced into half-moons
  • 1 cup cherry tomatoes, halved Use ripe ones for best flavor.
  • 4 cloves garlic, minced
Seasoning
  • 1 tsp dried oregano
  • 1/4 tsp red pepper flakes (optional)
  • to taste Salt and black pepper Season to your preference.
For Serving
  • 1/2 cup grated Parmesan cheese
  • 1/2 cup reserved pasta water To help bind the sauce.
  • to taste fresh basil leaves, for garnish Adds brightness.

Method
 

Preparation
  1. Boil a large pot of salted water and cook the pasta according to package directions until al dente.
  2. Reserve 1/2 cup of pasta water before draining the pasta.
Cooking
  1. Heat 1 tablespoon of olive oil in a large skillet over medium heat.
  2. Add the chicken sausages and cook for 5-7 minutes until browned. Remove and slice into rounds.
  3. In the same skillet, add 1 tablespoon of olive oil and sauté minced garlic for 30-45 seconds.
  4. Add sliced zucchini to the skillet and cook for 3-4 minutes until softened.
  5. Stir in cherry tomatoes, oregano, and optional red pepper flakes, and cook for another 3-4 minutes.
  6. Return sausage slices to the skillet, add cooked pasta and reserved pasta water, and toss to combine.
Serving
  1. Divide the mixture into bowls, garnish with fresh basil and sprinkle with Parmesan cheese before serving.

Notes

Reserve the pasta water for a better sauce consistency. Don’t overcrowd the pan while cooking zucchini.
