Preparation
- Mix the olive oil, lemon juice, kosher salt, black pepper, paprika, dried oregano, garlic powder, and onion powder in a large bowl until smooth.
- Taste the marinade to ensure it’s bold and slightly salty.
- Add the chicken thighs to the bowl and toss to coat. Cover and marinate for at least 30 minutes, or up to 4 hours.
Chimichurri Sauce
- Finely chop the fresh parsley and oregano. Combine them with the minced garlic, red wine vinegar, olive oil, red pepper flakes, salt, and black pepper in a bowl.
- Mix until well combined and let the sauce rest at room temperature while the chicken cooks.
Cooking
- Preheat your air fryer to 390°F.
- Arrange the marinated chicken thighs skin-side up in the air fryer basket.
- Cook the chicken for 22 to 24 minutes, flipping halfway through. Check the internal temperature, aiming for 165°F.
Serving
- Transfer the chicken to a serving platter and let it rest for a few minutes.
- Drizzle chimichurri sauce over the chicken and serve the remaining sauce on the side.
Notes
For the best flavor, marinate the chicken for the full 4 hours. Always preheat the air fryer before cooking for even results.
