Ingredients
  

For the chicken and marinade
  • 6 pieces Bone-in, skin-on chicken thighs About 2.5 pounds
  • 3 tablespoons Extra virgin olive oil
  • 2 tablespoons Lemon juice, freshly squeezed
  • 1 teaspoon Kosher salt
  • 1/2 teaspoon Black pepper
  • 1 teaspoon Paprika
  • 1 teaspoon Dried oregano
  • 1 teaspoon Garlic powder
  • 1/2 teaspoon Onion powder
For the chimichurri sauce
  • 1 cup Fresh parsley, finely chopped
  • 2 tablespoons Fresh oregano, chopped (or 1 teaspoon dried)
  • 3 cloves Garlic, minced
  • 1/4 cup Red wine vinegar
  • 1/2 cup Extra virgin olive oil
  • 1/2 teaspoon Red pepper flakes
  • 1/2 teaspoon Salt
  • 1/4 teaspoon Black pepper

Method
 

Preparation
  1. In a large bowl, mix together the olive oil, lemon juice, kosher salt, black pepper, paprika, dried oregano, garlic powder, and onion powder until smooth.
  2. Taste the marinade to ensure it’s bold and slightly salty.
  3. Add the chicken thighs to the bowl and toss to coat. Cover and marinate for at least 30 minutes, or up to 4 hours.
Chimichurri Sauce
  1. Finely chop the fresh parsley and oregano.
  2. Combine with the minced garlic, red wine vinegar, olive oil, red pepper flakes, salt, and black pepper in a bowl.
  3. Mix until well combined and let the sauce rest at room temperature while the chicken cooks.
Cooking
  1. Preheat your air fryer to 390°F.
  2. Arrange the marinated chicken thighs skin-side up in the air fryer basket.
  3. Cook the chicken for 22 to 24 minutes, flipping halfway through. Check the internal temperature, aiming for 165°F.
Serving
  1. Transfer the chicken to a serving platter and let it rest for a few minutes.
  2. Drizzle chimichurri sauce over the chicken and serve the remaining sauce on the side.

Notes

For the best flavor, marinate the chicken for the full 4 hours. Always preheat the air fryer before cooking for even results.
