Chinese Chicken Salad

Ingredients
  

For the Dressing
  • 3 tablespoons Rice vinegar
  • 2 tablespoons Hoisin sauce
  • 2 tablespoons Soy sauce
  • 1 tablespoon Honey
  • 1 teaspoon Ginger paste
  • 1 clove Garlic, minced
  • 2 tablespoons Olive oil
  • 1 tablespoon Sesame oil
For the Salad
  • 4 cups Napa cabbage, shredded
  • 2 cups Iceberg lettuce, chopped
  • 1 cup Carrots, shredded
  • 2 cups Cooked chicken breast, sliced or shredded
  • 1 can Mandarin oranges, drained
  • 4 tablespoons Green onions, sliced
  • 1/2 cup Slivered almonds Toast for extra flavor
  • 2 tablespoons Toasted sesame seeds
  • 1 cup Crispy chow mein noodles Add just before serving

Method
 

Preparation
  1. If using raw chicken breast, season lightly with salt and pepper. Heat oil in a skillet over medium-high heat and cook the chicken for 5-6 minutes per side until cooked through. Let rest, then slice.
  2. In a small mixing bowl, whisk together rice vinegar, hoisin sauce, soy sauce, honey, ginger paste, and garlic. Gradually add olive oil and sesame oil while whisking.
Assembling the Salad
  1. In a large mixing bowl, combine napa cabbage, iceberg lettuce, and shredded carrots. Toss gently to mix.
  2. Layer sliced chicken, mandarin oranges, and green onions over the salad. Top with slivered almonds and toasted sesame seeds.
  3. Pour half the dressing over the salad and toss gently. Add more dressing to coat to your liking, but keep chow mein noodles separated until just before serving.
  4. Sprinkle chow mein noodles on top right before serving to maintain their crunch.

Notes

Prep components ahead and store separately to maintain freshness. Double the dressing if you like extra.
