Preparation
- In a large bowl, mix together the dry ingredients: flour, sugar, baking powder, baking soda, and salt.
- In a medium bowl, whisk the wet ingredients: egg, buttermilk, melted butter, and vanilla extract until smooth.
- Combine the wet and dry ingredients, stirring gently with a spatula until just mixed. It's okay if there are lumps.
- Fold in the chocolate chips gently.
- Let the batter rest for 5 minutes.
Cooking
- Preheat a non-stick skillet over medium-low heat and add a small knob of butter.
- Pour about 1/4 cup of batter onto the skillet, allowing it to spread naturally.
- Cook for 2 to 3 minutes until bubbles form on the surface and the edges look set.
- Flip the pancake and cook for an additional 1 to 2 minutes until golden.
- Keep pancakes warm in a low oven while cooking additional pancakes, adding butter as necessary.
Notes
For variations, try adding a mashed banana or pumpkin puree to the batter. You can also use the same batter to make waffles. Serve with chocolate sauce for an extra treat.
