Ingredients
  

Dry Ingredients
  • 1.5 cups all-purpose flour
  • 2 tablespoons granulated sugar
  • 2 teaspoons baking powder
  • 0.5 teaspoon baking soda
  • 0.25 teaspoon salt
Wet Ingredients
  • 1 cup buttermilk (or regular milk with 1 tablespoon vinegar)
  • 1 large egg Make sure it's at room temperature.
  • 2 tablespoons melted unsalted butter
  • 1 teaspoon pure vanilla extract
The Star
  • 0.75 cup semi-sweet chocolate chips Reserve a handful for topping, if desired.
Optional Add-ins
  • 1 ripe mashed banana For banana chocolate chip pancakes.
  • 0.5 teaspoon cinnamon
  • 0.25 cup pumpkin puree For pumpkin chocolate chip pancakes.
  • 0.25 cup chocolate sauce For topping.

Method
 

Preparation
  1. In a large bowl, mix together the dry ingredients: flour, sugar, baking powder, baking soda, and salt.
  2. In a medium bowl, whisk the wet ingredients: egg, buttermilk, melted butter, and vanilla extract until smooth.
  3. Combine the wet and dry ingredients, stirring gently with a spatula until just mixed. It's okay if there are lumps.
  4. Fold in the chocolate chips gently.
  5. Let the batter rest for 5 minutes.
Cooking
  1. Preheat a non-stick skillet over medium-low heat and add a small knob of butter.
  2. Pour about 1/4 cup of batter onto the skillet, allowing it to spread naturally.
  3. Cook for 2 to 3 minutes until bubbles form on the surface and the edges look set.
  4. Flip the pancake and cook for an additional 1 to 2 minutes until golden.
  5. Keep pancakes warm in a low oven while cooking additional pancakes, adding butter as necessary.

Notes

For variations, try adding a mashed banana or pumpkin puree to the batter. You can also use the same batter to make waffles. Serve with chocolate sauce for an extra treat.
