Frosting Base Ingredients
  • 8 ounces Cream cheese, full-fat block style, softened Use block-style, not spreadable
  • 1/2 cup Unsalted butter, softened 1 stick
  • 3/4 cup Cocoa powder, sifted Use quality cocoa for better flavor
  • 3 cups Powdered sugar, sifted
  • 1 teaspoon Vanilla extract
  • 1/4 teaspoon Salt Enhances chocolate flavor
  • 1 to 2 tablespoons Heavy cream or milk As needed for consistency

Method
 

Preparation
  1. Soften your butter and cream cheese at least 30 minutes before starting.
  2. Beat the softened butter and cream cheese together on medium speed for about two minutes until smooth and fluffy.
  3. Sift in cocoa powder in two batches, mixing on low speed until combined, then mix for an additional 30 seconds.
  4. Add vanilla extract and salt, mixing on low speed for about 15 seconds.
  5. Incorporate powdered sugar one cup at a time, mixing on low speed until combined, then increase speed to medium and beat for a full minute.
  6. Adjust consistency with heavy cream or milk if needed.
  7. Frost your cooled desserts with the prepared frosting.

Notes

Store leftover frosting in an airtight container in the fridge for up to a week. Chilling piped decorations helps them hold their shape.
