  • 8 ounces Bittersweet or dark baking chocolate (60-70% cacao), finely chopped Use a baking bar instead of chocolate chips.
  • 2 tablespoons Unsalted butter
  • 1 teaspoon Vanilla extract
  • 1/2 cup Water, divided
  • 4 large Egg yolks
  • 1/4 cup Granulated sugar, plus 2 tablespoons for whipped cream
  • 2 cups Heavy whipping cream, cold Keep cold for best results.

Method
 

Preparation
  1. Using a cold whisk attachment and a cold mixing bowl, beat the heavy cream and 2 tablespoons of sugar until soft peaks form. Refrigerate the whipped cream until needed.
  2. Set up a double boiler with water heated over medium heat. Add chopped chocolate, 1/4 cup of water, unsalted butter, and vanilla extract into the double boiler.
  3. Stir gently until the mixture is smooth and glossy.
  4. In a small saucepan, whisk together egg yolks, remaining 1/4 cup of water, and 1/4 cup granulated sugar. Cook over medium-low heat and stir constantly until the mixture reaches 160°F.
  5. Once at temperature, remove from heat and stir into the chocolate mixture until fully combined.
  6. Cool the chocolate mixture in an ice bath for 5 to 7 minutes while stirring occasionally.
  7. Gently fold the reserved whipped cream into the cooled chocolate mixture until smooth.
  8. Divide the mousse into serving glasses and refrigerate for at least 4 hours before serving.

Notes

For best results, keep ingredients cold, carefully monitor egg yolk temperature, and fold in whipped cream gently to maintain airiness. Variations include adding liqueurs or flavor extracts.
