  • 48 crackers Saltine crackers About one sleeve
  • 1 cup Salted butter Cubed (2 sticks)
  • 1 cup Light brown sugar Packed
  • 2 cups White chocolate chips Can substitute with dark or milk chocolate
Cinnamon Sugar Topping
  • 1/4 cup Granulated sugar
  • 1 tablespoon Ground cinnamon

Method
 

Preparation
  1. Preheat the oven to 325°F and line a large jelly roll pan with parchment paper or foil.
  2. Arrange the saltine crackers in a single layer on the pan, fitting them snugly.
  3. In a small bowl, mix together the granulated sugar and ground cinnamon for the topping.
Cooking
  1. Combine the cubed salted butter and light brown sugar in a medium pot over medium-low heat. Cook until melted and reaches a rolling boil.
  2. Allow the mixture to bubble for about three minutes until it deepens in color.
  3. Quickly pour the toffee mixture over the arranged saltines and spread it into every corner.
  4. Bake in the preheated oven for about eight minutes until bubbling.
  5. Sprinkle the white chocolate chips over the hot toffee. Let sit for 1-2 minutes to soften.
  6. Spread the melted chocolate evenly and sprinkle the reserved cinnamon sugar mixture over the top.
Cooling
  1. Place the pan in the freezer for about 15 minutes until hardened. Let it rest at room temperature for another 15 minutes.
  2. Flip the pan, peel off the foil, and break into pieces.

Notes

Watch the toffee closely while baking; overbaking leads to a bitter flavor. Store leftovers in an airtight container to maintain crispness.
