Preparation
- Preheat the oven to 325°F and line a large jelly roll pan with parchment paper or foil.
- Arrange the saltine crackers in a single layer on the pan, fitting them snugly.
- In a small bowl, mix together the granulated sugar and ground cinnamon for the topping.
Cooking
- Combine the cubed salted butter and light brown sugar in a medium pot over medium-low heat. Cook until melted and reaches a rolling boil.
- Allow the mixture to bubble for about three minutes until it deepens in color.
- Quickly pour the toffee mixture over the arranged saltines and spread it into every corner.
- Bake in the preheated oven for about eight minutes until bubbling.
- Sprinkle the white chocolate chips over the hot toffee. Let sit for 1-2 minutes to soften.
- Spread the melted chocolate evenly and sprinkle the reserved cinnamon sugar mixture over the top.
Cooling
- Place the pan in the freezer for about 15 minutes until hardened. Let it rest at room temperature for another 15 minutes.
- Flip the pan, peel off the foil, and break into pieces.
Notes
Watch the toffee closely while baking; overbaking leads to a bitter flavor. Store leftovers in an airtight container to maintain crispness.
