Ingredients

For the Base and Topping
  • 2 cans refrigerated cinnamon roll dough (12.4 oz each) with icing packets — don't throw those away
  • 3 tablespoons unsalted butter melted
For the Apple Filling
  • 4 medium apples (Granny Smith or Honeycrisp) peeled, cored, and thinly sliced
  • 1/3 cup granulated sugar
  • 2 tablespoons brown sugar packed
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • 1 tablespoon cornstarch
  • 1 tablespoon fresh lemon juice
For the Cream Cheese Layer
  • 8 oz full-fat cream cheese softened to room temperature
  • 1/4 cup granulated sugar
  • 1 large egg
  • 1 teaspoon pure vanilla extract
For the Glaze
  • 1 to 2 tablespoons milk (to thin if needed)

Method

Preparation and Preheating
  1. Set your oven to 350°F (175°C). Lightly grease a 9x13-inch baking dish with cooking spray or butter.
Make the Spiced Apple Filling
  1. In a large mixing bowl, combine apples with granulated sugar, brown sugar, cinnamon, nutmeg, cornstarch, and lemon juice. Toss until coated and let sit for 5 minutes.
Prepare the Cream Cheese Layer
  1. Beat softened cream cheese with sugar until smooth. Add egg and vanilla extract, and beat until fully incorporated.
Build the Bottom Layer
  1. Open first can of cinnamon rolls, separate, press flat and arrange in a single layer in the baking dish, and press seams together.
Add the Cream Cheese Layer
  1. Pour cream cheese mixture over cinnamon roll base, using a spatula to spread evenly.
Add the Apple Layer
  1. Spoon spiced apple mixture on top of cream cheese layer and drizzle melted butter over the apples.
Add the Top Layer of Cinnamon Roll Dough
  1. Open second can of cinnamon rolls, separate, flatten, and lay on top of apple filling, pressing seams together.
Bake Until Golden and Set
  1. Bake for 32 to 38 minutes until golden brown and center is set. Let rest for at least 15 minutes before slicing.
Glaze and Serve
  1. Warm reserved icing packets in warm water, thin with milk if needed, and drizzle over warm lasagna before serving.

Notes

Choose tart apples for the best texture. Allow flavors to meld by resting before slicing. A streusel topping can be added for extra crunch.
