- Preheat the oven to 350°F (175°C) and grease a standard 12-cup muffin tin with butter or cooking spray.
- Cube the brioche bread into 1-inch cubes, keeping sizes consistent for even baking.
- In a large mixing bowl, whisk together eggs, whole milk, granulated sugar, vanilla extract, ground cinnamon, nutmeg, and kosher salt until smooth.
- Fold cubed brioche into the custard mixture, ensuring each piece is coated, and let it rest for 15 minutes.
- Combine granulated sugar and ground cinnamon in a small bowl for the topping.
- Drizzle melted butter over the soaked bread, fold gently, and distribute the mixture evenly among muffin cups.
- Brush the tops with melted butter and sprinkle generously with the cinnamon-sugar mixture.
- Bake for 22 to 25 minutes until golden brown, and a toothpick inserted comes out clean.
