For the Cake Batter

Preparation
  1. Preheat your oven to 350 degrees F (180 degrees C) and line an 11x11-inch or 13x9-inch baking pan with parchment paper.
  2. Chop the apples and persimmons into small, even pieces and toss them with lemon juice in a bowl.
  3. In a separate bowl, combine melted butter, brown sugar, and cinnamon powder for the swirl mixture.
Batter Preparation
  1. In a large mixing bowl, whisk together eggs, sugar, vanilla extract, and oil until light and slightly airy.
  2. Sprinkle flour, salt, and baking powder over the wet mixture and gently whisk until just combined.
