Preparation
- Preheat the oven to 350°F (175°C) and lightly butter a 9-inch pie dish.
- In a medium bowl, combine chocolate cookie crumbs and 5 tablespoons of melted butter. Press the mixture into the pie dish and bake for 8-10 minutes. Allow to cool completely.
Making the Filling
- Melt the bittersweet chocolate in a heatproof bowl over simmering water. Let it cool at room temperature for 10-15 minutes.
- In a mixing bowl, beat 1 tablespoon of softened butter with granulated sugar until pale and fluffy, about 3 minutes.
- Add vanilla extract and salt, then the cooled melted chocolate, mixing until smooth.
- Add one room temperature egg at a time, beating for 4-5 minutes after each addition to achieve a silky texture.
- Pour the filling into the cooled crust and smooth the top. Cover with plastic wrap and refrigerate for a minimum of 4 hours, ideally overnight.
Topping and Serving
- Whip the heavy cream with powdered sugar until stiff peaks form.
- Spread or pipe the whipped cream on top of the pie. Garnish with chocolate shavings.
- Serve immediately using a clean knife to cut each slice.
