Ingredients
  

For the brownie batter
  • 1 cup All-purpose flour divided
  • cup Unsweetened cocoa powder
  • ¼ teaspoon Salt
  • 1.5 cups Granulated sugar
  • ¾ cup Melted butter
  • 2 large Eggs Use room-temperature eggs
  • 2 teaspoons Vanilla extract
  • ½ cup Mini semi-sweet chocolate chips Coated with reserved flour
For the coconut filling
  • 2.5 cups Sweetened coconut flakes
  • cup Sweetened condensed milk
  • 1 teaspoon Vanilla extract
  • ¼ teaspoon Salt

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C). Line an 8x8 inch baking pan with parchment paper, letting the edges hang over for easy removal.
  2. Lightly spray the parchment with nonstick cooking spray.
Mix Dry Ingredients
  1. In a medium mixing bowl, whisk together 1 cup flour, cocoa powder, and salt until even.
Coat Chocolate Chips
  1. In a small bowl, toss the mini chocolate chips with 1 teaspoon of reserved flour until lightly coated.
Mix Wet Ingredients
  1. In a separate bowl, combine sugar, melted butter, eggs, and vanilla extract. Whisk until smooth and glossy.
Combine Mixtures
  1. Pour the wet mixture into the dry ingredients. Fold gently, then add the flour-coated chocolate chips and combine.
First Batter Layer
  1. Scoop half of the brownie batter into the prepared pan and spread evenly.
Coconut Filling
  1. In a bowl, mix coconut flakes, condensed milk, vanilla extract, and salt until well combined.
Layer and Bake
  1. Spoon the coconut filling over the first brownie layer and spread evenly. Then, spoon the remaining brownie batter on top and smooth out.
  2. Bake in the preheated oven for 35 to 40 minutes or until a toothpick comes out with a few moist crumbs.
Cooling
  1. Let the brownies cool completely in the pan on a wire rack before slicing.

Notes

Letting the pan cool fully before slicing helps achieve clean edges. Store leftovers in an airtight container.
